The Story
Pagus grew out of southern Italian cooking with Calabrian roots, built on two things: fresh pasta made by hand each day and selected cuts cooked on the grill. The Madrid restaurant on Calle de Padilla trades as Pagus Brasa Calabresa, and there's a second Pagus in León.
The Cuisine
Calabrian and broader Italian. The grill takes Italian breeds like Podolica and Chianina, raised on Italian farms, as ribeye, lomo bajo, costata, fillet, tomahawk and T-bone. Pastas include caramelle filled with four cheeses, agnolotti with potato and sausage, cavatelli alla frissurata and maccheroni with 'nduja and smoked ricotta, served by the plate or in a sharing pan.
Starters
Starters lean Calabrian: a baked parmigiana with sausage, caciocavallo cheese off the plancha, a pinsa-style focaccia with 'nduja, mortadella and capocollo, plus a hand-cut beef battuta and a Chianina carpaccio. Most starters run about €14 to €28, and pastas €20 to €22 a plate.
Takeaway
The grill and the fresh pasta are also available to take away. You phone the order in, they cook it on the spot, and you collect it.
