The Story
Kippu is the project of chef-owner Qifeng Lin, known to everyone as Dani. He's of Chinese origin but spent his career in Japanese restaurants in China and Spain, and now nods to his roots through dishes like matsu lubina, ebi chili and yakimeshi pato. The restaurant, formerly Kiboka, plays on the idea of a night in a busy Japanese street, and its name means 'ticket' in Japanese.
The Cuisine
It's author-style Japanese, built on sushi and special nigiris, salmon, tuna, tuna belly, hamachi, escolar and beef among them, with signatures like gunkans topped with quail egg, foie, truffle and eel sauce. The sake list is long, running from sparkling and dry to aged koshu and cloudy nigori.
From Kiboka to Kippu
The restaurant opened as Kiboka and changed its name to Kippu in spring 2021, with the menu signed by Qifeng Lin. The idea is dinner in a busy back alley 10,000 kilometres away: Japanese street food made more sophisticated, with Chinese influences from the chef's homeland in dishes like matsu sea bass, ebi chili and duck yakimeshi.
What to Order
Go for a selection of special nigiris (salmon, tuna, toro, hamachi, escolar, beef), the gunkan moriawase with quail egg, foie, truffle and eel sauce, the tuna tartare and a sakura uramaki, with kimchi yaki udon from the hot side. The sake list runs from sparkling and dry to aged koshu and cloudy nigori, and there are cocktails.
Practicalities
