Qifeng Lin, known to regulars as Dani, is a chef from Fujian, on China's southeast coast, who moved to Spain and worked in Japanese restaurants in Tenerife, Las Palmas, Santander, Bilbao and Barcelona before settling in Madrid. He opened his first restaurant, Casa Sushi, in 2012, moving it to Calle Padilla in 2014, and followed it with Kippu in January 2019, on Calle General Pardiñas in the Lista neighbourhood. At Kippu he builds an author-style Japanese menu that nods to his Chinese roots through dishes like matsu lubina, ebi chili and yakimeshi pato, backed by a long sake list.

Career
He moved to Spain and worked in restaurants in Tenerife, Las Palmas, Santander, Bilbao and Barcelona before settling in Madrid. In 2012 he opened his first restaurant, Casa Sushi, on Calle Cartagena, moving it to Calle Padilla in 2014. In January 2019 he opened Kippu, formerly Kiboka, on Calle General Pardiñas in the Lista neighbourhood.
Philosophy
Of Chinese origin but built in Japanese kitchens, Lin cooks author-style Japanese food at Kippu, an homage to his roots through dishes like matsu lubina, ebi chili and yakimeshi pato, alongside special nigiris, sashimi and gunkans topped with quail egg, foie, truffle and eel sauce. The restaurant carries a long sake list, from sparkling and dry styles to aged koshu and cloudy nigori.
