The Story

Metro Bistro presents itself as a restaurant founded in the heart of Madrid out of a passion for food and a respect for local ingredients. It sits on Calle Imperial, just off Plaza Mayor, and runs a full carta, a separate bar menu and a tasting menu.

The Cuisine

Spanish bistro cooking built on local produce: cheeses, cecina and foie to start, rice, fish and grilled meat to follow, and a dessert list that ends on a chocolate homage.

The Carta

Starters include a cheese tasting with its garnishes (€13.50), house-made foie-gras terrine with guava (€14.60), Bierzo cecina with cheese cream, black olives and semi-dried tomato (€14), and Papas Metro to dip in romesco, Andean ají and a light alioli (€9.80). Prawns al infierno come with garlic mushrooms, crisp Cantabrian sea anemones with a seaweed tartare and lemongrass emulsion, a roast-pepper salad with bonito and ají amarillo, and hummus made with Fuentesaúco chickpeas. Mains run from crispy rice with prawns, squid and shellfish stock (€19) and a salt-cod cazuela with prawns and velvet-crab sauce (€22) to the chef's steak tartare with truffle, egg and foie (€22.50), a Spanish take on sweet-and-sour pork with Ibérico presa, red cabbage and plum (€22.50), Avileña beef tenderloin with potato gratin (€26.50) and grilled duck magret (€36). Bread and aperitifs are €2.50 a head.

Tasting Menu and Desserts

The tasting menu is €47 per person, served only when the whole table orders it, with an optional drinks pairing at €22. Desserts include a chocolate homage (€8.80), a pineapple cannelloni with coconut semifreddo and mango sauce, cheesecake with white chocolate and dulce de leche, an apple tart-crumble with vanilla ice cream, and artisan ice cream.

The Wine List

The reds are mostly Spanish and cover a lot of ground: Mencía from Bierzo (Pittacum, Pétalos del Bierzo), Ribeira Sacra, Madrid bottles such as El Regajal and El Hombre Bala, Priorat (Martinet Bru, Gratallops), Jumilla, Toro (Numanthia) and a Ribera run up to PSI and Flor de Pingus. Rioja goes from 22 Pies to Remírez de Ganuza Reserva. Wines from abroad include Argentine Malbec, Penfolds from Australia, a Gevrey-Chambertin, Châteauneuf-du-Pape and The Chocolate Block from South Africa.

Sol is the dead centre of the city and behaves like it, busy and walked through by everyone heading somewhere else.
