The Cuisine
Informal, current Basque cooking from traditional recipes with local touches: charcoal grills, sharing plates, cazuelas and roasts, with txakoli to drink. The carta runs from tomato talo, flame-seared red mullet, eel brioche and tempura fritters to grilled turbot and sole, prawns al ajillo, Iberian tartare, fried hake, chuleta and lamb, with desserts such as blue-cheese cheesecake, torrija, tocino de café and cuajada.
