Career

Certucha trained alongside Carmen Alti and Jesús Encinas at Diego Guerrero's DSTAgE and at Bibo before the three opened La Llorería together, a small bar-format restaurant on Calle de San Lorenzo in Madrid's Chueca neighbourhood, built around an eight-seat bar and a handful of low tables. Certucha has over a decade of cooking experience and has worked on research and innovation projects in cooking both in Spain and abroad. At La Llorería he composes the daily menu on the fly, gauging what diners want, built around a short list of ingredients that change with the season. The Michelin Guide names the restaurant an inspector's favourite.

Philosophy

The project is built on camaraderie and a wish to keep sharing the craft of cooking, and Certucha aims to make each meal there distinctive. Spanish food press describes the three chefs' cooking as unpretentious and unrestrained, mixing contemporary technique with childhood-memory flavours and traditional home cooking.
