Carmen Alti is a co-chef and co-founder of La Llorería, a small bar-restaurant in Madrid's Chueca neighbourhood that she runs with fellow chef José Certucha and partner Jesús Encinas. Biography
Career
Alti worked in the kitchens of Diego Guerrero's DSTAgE, as well as at BIBo and Punto MX in Madrid, before co-founding La Llorería with chef José Certucha and partner Jesús Encinas: a friendship and working partnership that grew out of their time together at DSTAgE. La Llorería, a small bar-restaurant on Calle de San Lorenzo in Chueca built around an eight-seat wooden bar, won its first Sol Repsol at the 2024 Guía Repsol awards gala in Cartagena on 4 March 2024, and the Michelin Guide names it an inspector's favourite.
Philosophy
The restaurant's cooking is built around creative, seasonal dishes served in full and half portions for sharing, with an approach the team describes as technically grounded rather than trend-driven.
