The Story

Kuoco opened in 2016 on Calle de San Bartolomé as Kuoco 360º, the project of two Venezuelans in Madrid, chef Rafa Bergamo and Andrés Correa. After more than eight years there, it moved in 2025 to Calle del Barquillo 30, a bigger room meant to give the cooking and the service more space.

The Cuisine

Fusion that the kitchen calls timeless: not classic or avant-garde, not traditional or modern, but its own language across cultures, drawing on Asia, Latin America and Spain. The carta runs from croquettes and rolls to ceviche, robata-grilled corvina and a Bresse pigeon in a Franco-Nikkei curry, alongside the Atemporal tasting menu.

From Kuoco 360º to Barquillo

Kuoco began in 2016 on Calle de San Bartolomé as Kuoco 360º, the restaurant of chef Rafa Bergamo and Andrés Correa, two Venezuelans in Madrid. In April 2025, after more than eight years, they closed that room to chase bigger dreams, and reopened as Kuoco at Calle del Barquillo 30, a larger space meant to give the cooking and the dining room more room. It holds one Sol in the Guía Repsol, held since 2021, and is recommended in the Michelin Guide.

The Cooking

The kitchen describes its food as timeless: not classic or avant-garde, not traditional or modern, but a language of its own that crosses cultures, with Asian, Latin American and Spanish influences. On the current carta, small bites include La Spéciale oysters with smoked calamansi ponzu (€6), a Tom Yam croquette with warm red prawn (€5.50), a Peking duck croquette (€4.50), Thai-style garlic prawn (€7.50) and steak and lobster rolls on brioche (€7.50 each). Starters run to a wild corvina ceviche with two-ají tiger's milk (€24), a Korean steak tartare (€24) and the 7 Potencias Asia-Caribe (€24); mains include robata-grilled corvina with Limeña beurre blanc (€27), octopus pibil (€25), braised beef cheek in a Mexico-Bangkok curry (€27), acorn-fed presa ibérica with Nikkei dressing (€28) and Bresse pigeon in a Franco-Nikkei curry (€29). Desserts, such as the Banoffee 30 and the Meximochi, are €12 to €14.

The Atemporal Tasting Menu

Atemporal is a tasting menu the restaurant calls a journey without borders or clocks, telling a sensory story rather than a linear one, and it changes with the produce. It costs €89, with a wine pairing at €48.

The current version runs from a smoked-eel 'bocata' on a charcoal crisp flower with chipotle, a Poget 'La Spéciale' oyster in a tomatillo-yuzu aguachile, a garlic-Thai red prawn with fermented chilli and finger lime, and a Peking duck croquette, to kombujime scallop sashimi with sesame ponzu and soba, a siu mai of free-range chicken with a tom kha gai air and ají amarillo, 'Laksallesa', robata-grilled corvina with wok-fried peas and curry leaves, and aged duck with tandoori-spiced carrot purée, sour cherry chutney and Cantonese sauce. It closes with a sake, apple and huacatay pre-dessert and 'Violeta andina', coconut, violet and chicha morada.

The Room, the Bar and the Wine

The Barquillo space is industrial, with a metal ventilation structure crossing the original ceiling and a wine cellar on display at the entrance. At the back sits the black marble bar brought from San Bartolomé, used for eating at the bar and for cocktails, which mix Latin American and Asian flavours, such as the Rocoto Drop with pisco and huacatay. Paula Prokopiak leads the wine list, which opens with a long Champagne section, with producers such as Agrapart and Bérêche.

The wine list opens with a letter to guests: the wines are chosen from producers the team knows personally, with local grape varieties first and a declared love of bubbles, which pair naturally with the cooking. The Champagne pages are grower-led, from Agrapart, Bérêche & Fils, Larmandier-Bernier and Les Frères Mignon to Jacques Selosse's Substance. The bar's own list of cocktails, at €14, borrows the kitchen's map: a Rocoto Drop of pisco, huacatay and yellow Chartreuse with rocoto oil, a Kuoco Thai of Roku gin, galangal, lemongrass, ginger beer and coconut foam, a Mon Chery of vermouth, cacao and oloroso, and an Esquites built on tequila infused with robata-grilled corn.

The Barquillo room is industrial, with a metal ventilation structure crossing the original ceiling, a wine cellar on show at the entrance and, at the back, the black marble bar brought over from the old San Bartolomé room, kept for eating at the bar and for cocktails.
