The Story

VelascoAbella is Óscar Velasco and Montse Abellà's first restaurant of their own, opened in the Hispanoamérica neighbourhood of northern Madrid in June 2023. It came after a hard ending: Santceloni closed during the pandemic when the Hotel Hesperia shut, and the couple spent two years in a legal dispute, resolved in summer 2022, during which they couldn't start anything new. Velasco also turned down other offers, including the gastronomic direction of the Finca Serena hotel in Mallorca, to open a place of their own. It won a Michelin star in the 2025 guide and holds two Repsol Soles.

The Cuisine

Beyond the tomato soup and the hake loin, the menu runs to a roasted sweet potato salad with yogurt, red onion, cardamom, mint and cilantro, smoked razor clams with a cold vegetable medley, John Dory with lentils and bone broth, pan-seared foie gras in an Iberian ham consommé, and a carrot granita with lime, dill, oats and ginger for dessert.

Other dishes that have defined the kitchen include marinated, seared mackerel, smoked ricotta ravioli with caviar, and squid with green beans and black truffle.

The History

Óscar Velasco and Montse Abellà spent close to two decades at Santceloni, one of Madrid's great two-Michelin-star restaurants, Velasco leading the kitchen and Abellà the pastry. When Santceloni did not reopen after the pandemic, the couple set out on their own, and in June 2023 opened VelascoAbella in Hispanoamérica, in the north of the city. It won a Michelin star in the 2025 guide and holds two Repsol Soles.

The Room

The dining room is bathed in natural light, a bright and calm setting rather than a theatrical one, with dressed tables and a bar by the entrance. Service is warm and unhurried, in keeping with a restaurant run by the couple themselves, with Montse Abellà at the front of house.

On the ground floor, apart from the dining room, is El Apartamento, a space for private events of up to 20 people, with its own fully equipped kitchen. It can be booked as a private restaurant with Velasco's cooking or for presentations, courses and tastings, by phone or by email to the restaurant.

The Menu

VelascoAbella offers both a tasting menu and a full à la carte, both built on seasonal, top-quality product. The tasting menu, a selection of dishes meant to show the essence of Óscar Velasco's cooking, is six savoury courses and two desserts for €138, with an optional cheese course for €12 more.

À la carte, starters run from €33 to €54, from a semi-roasted tomato soup with pickled onion, basil and Parmesan to goose barnacles with a cold vegetable medley, and mains from €35 to €59, among them hake with Maresme peas, John Dory with lentils and bone broth, and smoked cheese ravioli with Oscietra caviar. Montse Abellà's desserts are €17 each, artisan cheeses €24, and an allergen menu is available.

Booking VelascoAbella

VelascoAbella serves lunch from 13:30 to 15:30 and dinner from 20:30 to 22:30, Tuesday to Saturday. It is closed on Sunday and Monday and for the whole of August. Tables can be booked online through CoverManager, by phone or by email, and there is parking nearby. The nearest metro stations are Colombia and Concha Espina.

The Team

Óscar Velasco, born in Segovia, and Montse Abellà met in the kitchen of Santi Santamaria's three-Michelin-star El Racó de Can Fabes, in Sant Celoni, where Velasco became one of Santamaria's favourite disciples; the story goes that they were sent home one day for refusing to take their day off, went to dinner together, and that was that. They then spent some 20 years at Santceloni, Santamaria's Madrid restaurant in the Hotel Hesperia, Velasco running the kitchen and Abellà the pastry. Velasco won Spain's Premio Nacional de Gastronomía as best chef in 2007, and Abellà the International Academy of Gastronomy's Grand Prix au Chef Pâtissier in 2016. At VelascoAbella the split is the same, with Velasco in the kitchen, while Abellà runs both the pastry and the dining room.
