Introduction

The Madrid Argentine and Uruguayan List We Send to Friends

Martín and Joaquín Narváiz age their own beef up to 350 days at Lana, their Ríos Rosas parrilla, and it's the most-cited Argentine name in Madrid's food press. It's one of thirteen restaurants here that work the Río de la Plata tradition in some form, from Ceferino's asado en cruz to Tita de Buenos Aires' handmade empanadas across from the Retiro and Picsa's wood-fired Argentine pizza on Ponzano.

A Guide to Argentine and Uruguayan in Madrid

What is a parrilla?

Parrilla is the Argentine and Uruguayan word for a live-fire grill, and restaurants built around it tend to serve individual cuts by breed and origin rather than a single roast.

What is asado en cruz?

Asado en cruz, cross-fire roasting, is a Río de la Plata technique where whole cuts of meat are staked on iron crosses and slow-cooked beside an open wood fire rather than over a flat grill. Ceferino, in Madrid's Recoletos barrio, builds its menu around it.

What's the difference between milanesa and a breaded cutlet?

Milanesa is the Argentine and Uruguayan take on a breaded, fried cutlet, usually beef, served on its own, napolitana-style with tomato and cheese, or built into a sandwich.

What is dulce de leche?

Dulce de leche is a thick, caramelised milk spread that shows up across Argentine and Uruguayan desserts, from alfajores to flan, rogel and coulants.

How We Built This List

Years of Eating, Asking, and Going Back

We read Madrid's own food press for Argentine and Uruguayan cooking, including a Time Out Madrid feature published in February 2026 and IFEMA Madrid's own city guide, and cross-checked every name against its own menu, about text and Michelin or Repsol listing, because a restaurant only qualifies here if Argentine or Uruguayan cooking, or the Río de la Plata dishes that come with it, empanadas, milanesa, asado, dulce de leche, is a real, stated part of what it serves, not one stray menu line. That's why we've included the non-steakhouse side too: an empanada shop, a wood-fired Argentine pizzería, and sharing-plate rooms, alongside the parrillas and asadores. A handful of names that come up often in Madrid's Argentine coverage, including Brazza, La Dorita, Che Mendieta, Che Pibita, Fayer, El Camoatí and La Vaca Argentina, don't have a Guidavera page yet, so they're left off rather than guessed at. Prices are only stated where a venue's own menu gives them, or where a source we could verbatim-check does.

More on how we rank: our methodology and quality standards.

Michelin SelectedRepsol

Martín and Joaquín Narváiz opened Lana in Ríos Rosas in 2022, and it's grown into the most-cited Argentine grill in Madrid's food press. The kitchen ages its own beef, some cuts held up to 350 days, working Argentine cuts alongside Spanish Rubia Gallega. The menu runs from a knife-cut beef empanada and an 18-month aged Wagyu cecina to a Hereford ojo de bife and a Rubia Gallega chuleta aged 250 days, all priced by weight. Beyond the grill, Marta's vitel tonné and charcoal-grilled suckling lamb croquettes round out the starters. The wine list is exclusively Argentine, organised by region: Mendoza, Patagonia, Salta. Lana holds two Repsol soles, a Michelin Guide Selected listing, and took the Academia Madrileña de Gastronomía's international-cuisine award in 2025. It's closed Sundays.

#413 of 1001·€€€·Castellana·Argentine·Chef: Gastón Riveira

La Cabrera bills itself as a tribute to the culinary culture of the Río de la Plata, on Calle Velázquez in Salamanca. It's a parrilla working classic cuts over charcoal in the Argentine asado tradition: bife de chorizo, ojo de bife and asado de tira, plus a terrace and a strong wine list in a room that reads stylish and industrial. It's part of the Argentine grill franchise founded by Gastón Riveira. In 2023 it won second prize for hospitality at Meat Attraction, the trade fair run by IFEMA Madrid. It's open Monday to Saturday from noon to 11:30pm and Sunday from noon to 9pm, and runs around €51 to €100 per person.

La Cabaña Argentina is an Argentine steakhouse on Calle Ventura de la Vega, in the Cortes barrio of Centro. The menu runs on the grill: Argentine Angus, short ribs, skirt steak and sweetbreads, plus provoleta, grilled vegetables and octopus over quebracho charcoal, alongside Argentine Angus beef carpaccio and grilled artichokes with black truffle caviar and egg yolk. It's a big, group-friendly room with cocktails, open daily from 1:30pm to 11:30pm, and it runs on the higher end, around €30 to €70 per person.

Gurisa is chef Lucas Bustos's first Madrid project, an Argentine asador in Almagro set in the former home of Sergi Arola's two-Michelin-star Arola Gastro. It opened in June 2025. Fire runs through the whole menu, not just the mains: Iranian Beluga caviar with soft Galician potato crackers and 100% acorn-fed jamón ibérico open the market-starter section, before Argentine wagyu on the plancha, an Argentine Angus ribeye cap and a six-hour cooked blonde beef picaña. Dessert closes with a rogel made with Río de la Plata dulce de leche. There's à la carte and a tasting menu, an open kitchen, and a serious wine and cocktail list, in a room that's intimate and elegant. It's listed in the Michelin Guide, and open Tuesday to Saturday.

Nacha serves Argentine food on Calle Conde Duque, in the small, self-contained Conde Duque pocket of Centro. It opened in October 2024, opposite the Centro de Cultura Contemporánea Conde Duque. It's listed in the Michelin Guide, a listing rather than a star, and the format is sharing plates rather than courses: the kitchen's own Instagram has singled out a whole grilled molleja de corazón, heart sweetbread, and a smoked labneh among its plates. The room is small, warm-lit and intimate, with rustic decor and warm service. It's open Monday to Thursday from 20:00 to 00:30, and Friday and Saturday from 13:00 to 17:00 and 20:00 to 01:00; closed Sundays, with lunch a weekend-only thing. Prices run €26 to €50 per person.

Repsol Solete

Picsa takes the traditional Argentine pizza recipe and builds its own dough around it, baked in a wood-fired oven built by Jumaco & Maestro, a fourth-generation Madrid oven-maker, fired with controlled-felling holm oak. Much of what goes on top is made in-house too, including the cooked ham and a cheese blended from Galician varieties plus a couple the house keeps to itself. The picsas are built for two, from a simple Muzza up to specialties like Calabresa with 'nduja or confit duck and figs, alongside wood-fired oven empanadas and Porteño mezze like vitel tonné and baba ganoush. It holds a Repsol Solete, a lower distinction than a Repsol Sol, and coffee comes from Toma Café on an Italian machine brought from Milan.

Marcelo Settimo and Ana Antolini, an Argentine couple who moved to Madrid in 2020, opened the first Tita de Buenos Aires shop on Avenida de Menéndez Pelayo in 2021, across from Parque del Retiro. The business now runs several locations off its own obrador, handmaking Argentine empanadas: traditional and sweet beef, spicy shredded beef, BBQ rib, curried chicken, and vegetable and vegan versions made with Heura, among others. Beyond the empanadas, it makes sándwiches de miga, crustless Argentine sandwiches, and homemade Argentine desserts like alfajores de maicena, chocotorta and cheesecake. By its own account it took an honourable mention in the best gourmet shop category at the Premios Gastronómicos Metrópoli. Opening hours and prices aren't published; check the shop's own channels.

#468 of 1001·€€·Peña Grande·Argentine·Chef: César Ruda

El Viejo Almacén de Buenos Aires has served Argentine food in Peña Grande, in the Fuencarral-El Pardo district, for more than forty years, holding onto the porteño feel it opened with. César Ruda, the second generation, runs it today, and the empanadas are still made to his mother's recipe. The dining room doubles as a shrine to Diego Maradona, and live tango runs most evenings. The grill is the draw: Argentine-origin ojo de bife and bife de chorizo, Uruguayan-origin medialuna de vacío and colita de cuadril, and old-cow cuts like a chuletón sold by the kilo, alongside Wagyu cecina, chorizo criollo and achuras. Empanadas follow a recipe dated on the menu to 1977, and desserts run to alfajores and a dulce-de-leche coulant. It's closed Mondays and Sundays.

La Choripanería brings an Argentine parrilla to Lavapiés, on Calle Ave María in the Embajadores barrio. Time Out's own write-up, published in February 2026, found it already four years into serving choripanes as a business founded by Argentines. The grill runs cuts like skirt steak and beef flank steak, plus a trio of homemade empanadas, provoleta with tomato and oregano, and a choricroquetón, alongside a milanesa fugazzeta. It's closed Mondays, opens evenings Tuesday to Thursday and from lunch Friday to Sunday, and it's one of the cheapest entries on this list, running roughly €10 to €20 per person. Desserts include a flan with dulce de leche and cream and a pancake with dulce de leche.

La Pampa, trading as Pampa Beef, is an Argentine grill on Calle del Príncipe, in the Barrio de las Letras between Plaza de Santa Ana and Puerta del Sol. The kitchen runs on charcoal-grilled meats: an Argentine-meats section lists ribeye, chuletón, sirloin and peppered sirloin, alongside a separate Spanish-meats section of flank steak, short rib strip and skirt steak, plus starters like provoleta, chorizo criollo and a creole empanada. La Divina Bohemia sits on Calle de Don Pedro in La Latina, pairing exposed brick and a large mural with warm lighting for an intimate, bohemian feel. The kitchen cooks signature Argentine dishes from fresh, seasonal produce, with vegetarian and vegan options built in: a spinach and cheese empanada sits beside a spicy vegan pad thai, and the milanesa comes classic, napolitana or fugazzeta, in quarter, half or whole portions. There's also a dry-aged sirloin and a thin skirt burger, and desserts run to chocotorta and a flan with dulce de leche foam. It's closed Tuesdays, open late the rest of the week, and dog-friendly.

The Argentine and Uruguayan Scene in Madrid

Madrid's Argentine and Uruguayan scene splits across a few pockets. Ríos Rosas and Chamberí carry the Ponzano grill cluster, Lana's house-aged beef a few doors from Picsa's wood-fired Argentine pizza, with Gurisa's fire-led asador over in Almagro. Recoletos holds Ceferino's asado en cruz, while Salamanca carries La Cabrera's Río de la Plata tribute. Centro spreads the rest out: Nacha's sharing plates in Conde Duque, La Cabaña Argentina and La Pampa near Plaza de Santa Ana, and La Choripanería's choripanes in Lavapiés. Beyond the grill, Tita de Buenos Aires handmakes empanadas across from the Retiro. Together it's less one style of parrilla than a whole food culture, empanadas, milanesas and dulce de leche included, spread across the city.

Practical tips

Know before you go

A short survival guide for eating argentine and uruguayan in Madrid— everything we wish we’d known on our first trip.

  1. 1

Book ahead at the busiest grills. Lana asks you to choose your own steak knife before the meat arrives.

  2. 2

Beef at several of these kitchens is priced by weight, not as a fixed plate. Lana's bone-in chuleta cuts run €140 to €310 per kilo, and Piantao Legazpi's premium cuts run €78 to €130 for 500g or a kilo, so ask the price before you order if it matters to you.

  3. 3

For the non-steakhouse side of the Río de la Plata, Tita de Buenos Aires handmakes empanadas and sándwiches de miga, and Picsa bakes Argentine-style pizza in a wood-fired oven on Ponzano.

  4. 4

A few of these run on the cheaper end. La Choripanería in Lavapiés and La Pampa near Plaza de Santa Ana both keep most dishes under €20 to €30.
