Background

About Ceferino

The Story

Ceferino opened in January 2024, backed by an Argentine group, Marcos Mc Cluskey, Mariano Menéndez and Felipe Williamson, with Emilio Souto directing operations. Jorge Campos handled the interior design, the wood, marble and bronze-candelabra look meant to evoke an Argentine estancia.

The Cuisine

Argentine parrilla. The grill section splits into Argentine Aberdeen Angus cuts, dry-aged beef and the slow-cooked asador de cruz, with empanadas, provoleta, achuras and milanesas around them.

The Grill

The current carta (September 2026) lists Argentine Aberdeen Angus cuts with a recommended minimum of 500g: bife de chorizo and ojo de bife whole or as half portions, a Wagyu vacío medialuna, solomillo, and American Black Angus entraña. Dry-aged cuts come by the kilo: a boneless lomo aged 25 to 35 days, a 35-day Rubia Gallega chuletón and a T-bone. The asador de cruz, where meat is splayed on an iron cross and cooked slowly beside the fire, produces whole vacío and beef asado de tira, and a 'degustación asador' brings asado de tira, vacío and chorizo together on one board.

Before and After the Meat

Starters follow the Argentine script: hand-cut beef, fugazzetta and humita empanadas, sweetbreads, morcilla and chorizo, grilled provoleta and a knife-cut Angus steak tartare. There are grilled vegetables (artichokes, leek and onion, sweet potato in the embers, corn), salads including burrata with flambéed peaches, and from the kitchen, beef milanesa plain or napolitana, grilled salmon and corvina, smoked octopus with chimichurri parmentier and Austral prawns. Desserts include a mascarpone flan, pavlova and panqueques filled with dulce de leche. Bread and aperitivo are charged at €3.50, and the terrace carries a 10% supplement. The kitchen closes earlier than the bar: 23:30 most nights, midnight on Friday.

The Team

The restaurant's own philosophy, attributed to its founders: 'cocinar con fuegos es el modo más emocionante de ser generoso,' cooking with fire is the most exciting way to be generous, a line that shows up across their materials.

Getting There

On Calle de Jorge Juan in Recoletos, Ceferino opened in January 2024 across three levels styled like an Argentine estancia, wood, marble and bronze candelabras, with a basement speakeasy called Malevo.

Nearby

Recoletos runs along the grand boulevards between Plaza de Cibeles and Puerta de Alcalá, where the buildings are stately and the pavements are wide. The eating leans formal and expense-account, with classic dining rooms sitting beside newer, sharper kitchens. It shades into Salamanca as you go east, and the prices follow.
