About Quintín - Ultramarinos

The Story

Quintín is one of the pillars of Grupo Paraguas, the company of Asturian couple Sandro Silva and Marta Seco, who started with El Paraguas on Jorge Juan in 2004 and went on to open Amazónico, Numa Pompilio, Aarde and others. Quintín is modelled on the old ultramarinos, the colonial-goods grocers where people once gathered, and in the group's words it set out to 'go back to doing things the way they were done years ago'. The shop side lives on in the own-label products, including Vermouth Quintín, and in 2026 the group announced it would replicate Quintín in Oviedo. It's listed in the Guía Repsol.

The Cuisine

Spanish deli and conservas: the tinned-seafood-and-cured-goods end of Spanish eating that the ultramarinos name points to, plus a cocktail and aperitivo bar. There's a general menu PDF on the venue's own site.

The Carta

Breakfast runs from 09:00 (10:00 on Sundays) until noon, then the general carta takes over until midnight or later. To share: artichoke and mallard rolls, chistorra or Ibérico ham croquetas, artichokes with egg and ham shavings, a fried rice with pheasant, corn-battered prawns, razor clams in ají amarillo, a leek and hake tosta, egg casserole with carabineros and the house clams (€20 to €39). Cold plates include a sea-bass tiradito with tamarind, corvina ceviche, sirloin steak tartare and tuna tartare with mango, and the deli counter shows in the Ibéricos: mortadella with pepper and lime, Cantabrian anchovies, 'doblao' lomo, a private-selection ham and Wagyu cecina. Fish mains run from encebollado chipirones and squid in its ink to Bilbao-style monkfish, sea bass with cockles and black cod with red quinoa (€27 to €39). There are separate wine, cocktail and spirits lists.

Recoletos runs along the grand boulevards between Plaza de Cibeles and Puerta de Alcalá, where the buildings are stately and the pavements are wide.
