About Aarde

The Story

Aarde, Afrikaans and Dutch for 'earth', is Grupo Paraguas's journey to the roots of the African continent: in the house's words, a tribute to the land and everything it gives, through its landscapes, fauna, flora and cultures, their aromas, colours and music. It faces the Puerta de Alcalá on Plaza de la Independencia and belongs to the group of Asturian couple Sandro Silva and Marta Seco, which has been in Madrid since 2004 with El Paraguas, Amazónico, Quintín and others. Dishes come out of an open kitchen on tribal ceramic plates. It's listed in the Guía Repsol, priced for an occasion rather than an everyday stop, and there's a terrace.

The Cuisine

African-inspired international cooking, modern-creative in style, cooked in a wok, a tandoor, on a teppanyaki and on a Josper grill, with a raw bar and sushi alongside.

The Carta

The carta runs a wide arc. From the raw bar: cured sea-bass tiradito with smoked maple, bluefin tuna tartare with quail egg and shiso tempura, salmon usuzukuri, sashimi and nigiri moriawase, scallop nigiri with foie, Wagyu nigiri with caviar, Poget oysters four ways and Oscietra or Beluga caviar. The African thread shows in the wok and tandoor section: an okra green curry, pumpkin hummus with injera bread, tandoor cauliflower with Sijilmasa spices, a carabinero jollof rice, 'kamba wa nazi' prawns in coconut milk and spicy poussin bolinhos. Fish include a Brazilian moqueca of corvina and prawns, monkfish with habanero and red tuna with cuca preta sauce, and the grill covers South African piri-piri poussin, Galician beef tenderloin, a chimichurri Black Angus skirt, a Wagyu Denver steak, a Josper beef rib with cassava purée, a 30-day aged cowboy steak and Chilean Wagyu tenderloin. There are separate cartas for rices, charcuterie, cocktails and wine, and bread from the group's own bakery.
