La Cabrera is the Madrid outpost of Gastón Riveira's Buenos Aires parrilla, opened in February 2023 on Calle Velázquez in the Salamanca district. Over two floors with an open kitchen facing the grills, it serves Argentine cuts such as ojo de bife, entraña and bife de chorizo, cooked fast over strong heat, with chimichurri, criolla and a spread of small side dishes.

About La Cabrera

The Story

La Cabrera began in Palermo, Buenos Aires, as chef Gastón Riveira's life project more than two decades ago, and became one of the city's best-known parrillas: named the city's best parrilla in 2018 and on Latin America's 50 Best Restaurants list from 2013 to 2016 and again in 2021. Riveira brought it to Spain in 2023, with this two-floor 'casa de carnes' on Calle Velázquez and a Barcelona sibling, and the Spanish restaurants are run with the Grupo Los Lirios.

The Cuisine

Argentine parrilla. The grill is fixed and the fire strong, and the meat keeps moving so it seals fast, crisps outside and takes on smoke as the fat drips onto the embers. Cuts include ojo de bife (Riveira's favourite, lomo alto in Spanish terms), bife de chorizo, entraña, lomo, tapa de cuadril, a less usual cut from the foreleg, pork churrasquitos and chorizo de rueda, from Hereford, Aberdeen Angus and Wagyu, some brought from Argentina and some sourced locally.

The Grill and the Sides

On arrival you're shown a chart of cooking points so you can pick your own; Riveira's own preference is just short of medium. The meat comes with the house sauces, chimichurri, an emulsified criolla, persillade and provenzal, and with the small dishes La Cabrera is known for, hot and cold, built on Riveira's techniques: old-style mustard foam, a sweetcorn crème brûlée, beetroot hummus, pear chutney or cauliflower purée.

The Room

The Madrid restaurant seats around 75 over two floors, with the kitchen open to the grills, plus a bar and a terrace. The wine list leans Argentine. It's open from noon to 23:30 Monday to Saturday and to 21:00 on Sunday, and has stayed open through August in past years. Book online or call 671 28 08 78.
