A Guide to La Latina in Madrid

What is La Latina known for?

La Latina is part of Madrid's old centre, the streets that run down from Puerta de Moros and the Mercado de la Cebada toward the old city walls. It's best known for tapeo, bar-hopping between small plates, especially along Cava Baja and Cava Alta.

What's a taberna?

A taberna is a traditional Spanish tavern, usually a small room built for standing at the bar over wine, vermut and small plates rather than a formal seated meal.

What are huevos rotos?

Huevos rotos, literally 'broken eggs,' are fried eggs served over a bed of fried potatoes and broken so the yolk runs through the dish, often finished with jamón or chorizo. It's one of the dishes most associated with Cava Baja.

What's a posada?

A posada was historically a Spanish inn offering food and lodging to travellers and traders. Several restaurants in La Latina, including some on Cava Baja, are set inside old posada buildings and keep the name today.

What's cocido madrileño?

Cocido madrileño is Madrid's classic chickpea stew, traditionally served in courses, broth first, then the chickpeas and vegetables, then the meats. Several restaurants in the neighbourhood serve it, often made to order or on a set day of the week.

We built this list from five editorial sources covering La Latina dining, cross-checked against the Madrid restaurants we've profiled. A restaurant only made the list if its own address places it on or right around Cava Baja, Cava Alta, Plaza de la Paja, Calle del Almendro, Plaza de la Cebada, Calle de Toledo or Cascorro. Several places named repeatedly by outside sources, including flagship tabernas and a historic cocido house, don't currently have a Guidavera page and are recorded as gaps rather than invented. Where we couldn't verify a specific number, price or date against a restaurant's own listing or a source we could quote directly, we left it out.

Corral de la Morería Gastronómico is the fine-dining room inside the Corral de la Morería, the flamenco tablao that has staged shows every night since 1956. Chef David García, who trained under Martín Berasategui and at elBulli, Mugaritz and Nerua before earning a star at Álbora, cooks what he calls cocina de raíz, Basque-rooted haute cuisine built on broths, stocks and organic produce, for just four tables a night. It has held a Michelin star since 2019 and three Repsol Soles since 2023. The single tasting menu, Menú Compás, runs €105 per person, with two optional wine pairings drawing on a cellar of more than 1,000 Jerez references. Dinner only, and it can be combined with the tablao's own flamenco show in the same building.

2. Casa Lucio — Cava Baja institution serving huevos rotos since 1974

Casa Lucio has cooked from Cava Baja 35 since November 1974, when Lucio Blázquez opened it in a building that has held a tavern since 1720. The huevos rotos are the house signature and have been since day one, alongside a Revuelto Lucio of scrambled eggs with wild mushrooms and shrimp and a rotating daily guiso, often lentils or cocido madrileño on Wednesdays. Blázquez, who came to Madrid at twelve to work under an owner who eventually sold him the place, still runs it today alongside his children María del Carmen, Fernando and Javier. Tiled walls and wooden tables spread across a bar and two floors, lively and rustic, and it runs busy and hard to book. It holds one Repsol Sol.

3. Botín — Guinness-listed oldest restaurant in the world, roasting since 1725

Repsol Recommended

Botín has served Castilian roasts on Calle de Cuchilleros since 1725, and Guinness World Records lists it as the oldest restaurant in the world. Its original firewood oven, which has never gone out, still roasts the cochinillo asado that's the house signature, priced at €32.50 on the current carta, alongside roast lamb and callos a la Madrileña. The building runs four floors that keep their eighteenth-century interiors, and Guinness names Ernest Hemingway among its historic visitors. It's open every day, 13:00 to 23:30, and listed as Recomendado in the Guía Repsol. Expect a lively, classic room that fills with both tourists and regulars, and book ahead through Botín's own website.

4. La Posada de la Villa — Wood-fired roast lamb in a house dated to 1642

La Posada de la Villa serves Castilian roasts on Cava Baja, in a house that dates itself to 1642. Owner Félix Colomo Domínguez rescued the building in 1980 and reopened it after a two-year restoration as a wood-fired roast house; Antonio García Pino manages the dining room today, and César Rubio has cooked at its oven since at least 2021. The kitchen specialises in roast lamb from that wood-fired oven and a cocido de puchero made to order. The room is classic and rustic, with a terrace, and it works well for groups and families. It's closed Sunday evenings and for summer holidays from 3 August to 2 September; book through CoverManager.

5. Tresde — Michelin Bib Gourmand, three-course format on Cava Alta

Tresde runs a Michelin Bib Gourmand kitchen on Cava Alta from chef Aitor Sua, who trained in Paris at Ze Kitchen Galerie under William Ledeuil and at the historic Grand Véfour. It opened in early April 2023. Rather than a tasting menu, which Sua has said he grew 'un poco harto' of, a little tired of, the restaurant runs a streamlined three-course Fórmula EPP (entrante, plato, postre) at €56, with a three-glass wine pairing for €25 more. Past dishes have included steak tartare with purple potato chips, morcilla with pine nuts, and monkfish with potato purée and capers. Much of the produce is organic, from Cultivo Desterrado, and the carta shifts almost daily. It holds a Bib Gourmand and one Repsol Sol, and Sua was a finalist for Cocinero Revelación at the 2024 Premios Metrópoli.

Las Cuevas de Luis Candelas has served traditional Castilian cooking on Calle de Cuchilleros, next to Plaza Mayor, since 1860. Staff dress in period costume as the 19th-century bandit the restaurant is named for, and the kitchen roasts suckling pig and suckling lamb in a wood-fired oven, alongside callos a la madrileña and cocido de puchero. Four dining rooms, each with its own atmosphere, plus a terrace overlooking the Arco de Cuchilleros, seat 140 diners. It's lively and rustic, with live music and polished service, though prices run on the expensive side.

Marmitón moved at the end of September 2026 from its tiny original kitchen on Calle de las Aguas into the larger Cava Alta 13 space that had housed Barmitón, with a new 'Menú NO Menú' that each diner builds from the day's dishes. It opened in 2020. Young chefs Pablo Sánchez and Lalo Zarcero built the small room around fermentation, smoking and pickling, folded into dishes meant to read familiar. Aperitivos run to oysters and steak tartare; mains have included cochinillo a baja temperatura, bacalao negro with miso and a Bluefin tuna galete; desserts run to a goat's-milk flan and a lemon pie. It opens Wednesday to Saturday for lunch and dinner and Sunday for lunch, closed Monday and Tuesday, and it's listed in the Guía Repsol.
