Aitor Sua is the chef and co-founder of Trèsde, a market-driven restaurant on Cava Alta in Madrid's La Latina neighbourhood, opened in April 2023 with childhood friends Lucas Fernández and Miguel Vallés. Trained in Paris at Le Grand Véfour and at Ze Kitchen Galerie under William Ledeuil, Sua favors direct, vegetable-forward cooking over tasting-menu formats, saying he'd grown a little tired of the tasting menu. Trèsde holds a Sol in the Guía Repsol and a Bib Gourmand from the Michelin Guide, and Sua was a Cocinero Revelación finalist at the 2024 Premios Metrópoli.

Biography

Early years

Sua trained in Paris, working at Le Grand Véfour and at Ze Kitchen Galerie under chef William Ledeuil, an apprenticeship that shaped his focus on vegetables and precise, elegant plating.

Career

In April 2023, Sua opened Trèsde on Cava Alta in Madrid's La Latina neighbourhood together with childhood friends Lucas Fernández (dining room) and Miguel Vallés (business side), on the former site of the tavern Matritum. The restaurant has since been awarded a Sol in the Guía Repsol and a Michelin Bib Gourmand, and Sua was a finalist for Cocinero Revelación at the 2024 Premios Metrópoli.

Philosophy

Sua has said he'd grown "un poco harto del menú degustación" (a little tired of the tasting menu), and prefers a more approachable, direct menu built as three courses, starter, main and dessert, around market produce, with vegetables treated as a starring ingredient rather than a side, sourced in part from producer Cultivo Desterrado in Cádiz.
