The Story
Ástor describes itself as a small family restaurant, and it has chosen to stay that way. The team says eight tables is the right number for each diner to feel looked after, and that it has no ambition to grow the room; instead the same team runs a second, larger Ástor by Plaza de Puerta Cerrada, which takes groups, and the wine bar Cedrón further along Almendro. Its own definition of fusion is that tradition has to smile to survive, and that avant-garde cooking without respect is just a tantrum.
The Cuisine
A short carta that crosses between Buenos Aires, Lima, Spain and East Asia, with plates sized to share. Argentine beef and provoleta sit next to Peruvian ceviche, Ibérico ham from Guijuelo and a soy-glazed char siu pork belly.
The Carta
Starters include beetroot hummus with feta and pomegranate, baked Argentine empanadas of spinach, mozzarella and raisins, Ibérico ham croquetas on pea purée and salt-cod croquetas with katsuobushi and a tomato-orange hot sauce. The fried ceviche of dogfish marinated in ginger, garlic and cumin with salsa criolla (€15.50) can also come as an 'Experiencia Limeña' with two mini pisco sours. The Ástor provoleta comes with roasted red peppers, watercress and garlic-basil oil. Mains run from the mushroom risotto with red-wine pears and candied walnuts (€21), on the menu since early on, to char siu pork belly, veal meatballs with Parmesan sauce, Extremadura pork ribs with roast pumpkin and gorgonzola, corvina with a tonkatsu glaze, tagliatelle with monkfish and prawns in armagnac, and Argentine bife de chorizo (€26.50) or ojo de bife (€33) with house chimichurri. Desserts include a lime-scented baked cheesecake, a free take on chocotorta with dulce de leche, and an affogato.
Wine and Cocktails
The wine list is broad for the size of the room: Madrid bottles such as Alma Carraovejas' Marañones from the Sierra de Gredos, Zuccardi from Mendoza's Valle de Uco, Rhône and Alsace wines including Trimbach's Cuvée Frédéric Emile, a Pommard, a Sicilian Etna red and Lustau sherries, plus cava and Champagne by the glass or bottle. The cocktail list is all house creations at €11, built on rum, gin, whisky, tequila and sherry, alongside Peruvian pisco and Michel Couvreur whiskies.

Ástor opens Friday to Tuesday, 13:00 to 16:00 and 20:00 to 23:30, and closes Wednesday and Thursday. Book online; tables are capped at five people, and larger groups are sent to Ástor Puerta Cerrada. Bookings may be released after 15 minutes without word of a delay.
