Marmitón is the creative, product-led restaurant of chefs Pablo Sánchez and Lalo Zarcero in La Latina. It opened in 2020 as a tiny bistró on Calle de las Aguas and, at the end of September 2026, moved into the larger space on Calle de la Cava Alta that had housed their second project, Barmitón. The new stage centres on a 'Menú NO Menú' that each diner builds from the day's dishes. It's listed in the Guía Repsol.

About Marmitón

The Story

Marmitón opened in 2020 in a very small kitchen on Calle de las Aguas, where Pablo Sánchez and Lalo Zarcero, as they put it, dared to open a business without quite knowing what awaited them. In November 2023 they opened a second place, Barmitón, at Cava Alta 13. Barmitón closed in July 2026, and after months of building work Marmitón said goodbye to Calle de las Aguas on 27 September 2026 and moved into the Cava Alta space, opening a more ambitious and personal stage. It's listed in the Guía Repsol.

The Cuisine

Creative cooking built on product, technique and season, reinterpreting classic recipes and changing the carta often. In the new stage, diners decide which dishes make up their 'Menú NO Menú', building their own route around the table. Recent dishes have included a Daniel Sorlut oyster with ponzu caviar and citrus granita, a frisée salad with ranchera sauce and fried pig's ear, black cod with miso, potato purée and seaweed, Barmitón's artichoke with parmesan, red pesto and almonds, and a lemon pie with almond crumble and crisp meringue.

Chefs Pablo Sánchez and Lalo Zarcero cooked at Hélène Darroze at The Connaught in London, El Corral de la Morería and Fismuler before setting out together. Sánchez, an engineer by training, and Zarcero run the kitchen and come out to the dining room themselves.

Calle de la Cava Alta 13, in Barrio de la Latina in Madrid's Centro district, a couple of minutes' walk from La Latina metro.

Nearby

La Latina is Madrid's tapeo heartland, a knot of steep, narrow streets around Cava Baja and Plaza de la Paja where bars spill onto the pavement from midday. It sits beside El Rastro, the Sunday flea market, and gets busiest on weekends when the vermút crowd takes over the terraces.
