About Corral de la Morería
The Story
Corral de la Morería opened in 1956, founded by Manuel del Rey, and the del Rey family still runs it; Blanca del Rey, the bailaora who created the famous shawl soleá on its stage, programmes the flamenco. The house calls it the world's oldest and most famous tablao, and it has been named the world's best flamenco tablao by the Cante de las Minas festival and received the City of Madrid Award, which the city has also given to the Prado, Thyssen and Reina Sofía.
The Cuisine
Chef David García directs the kitchen. His cooking is rooted in stocks, broths and juices made from good raw produce, and in the small gastronomic room it has earned a Michelin star and three Soles in the Guía Repsol. The cellar is known for a famously deep Sherry list.
Six Decades on the Stage
From Pastora Imperio onwards the tablao has hosted Antonio Gades, La Chunga, Fosforito, Lucero Tena, Fernanda and Bernarda de Utrera, Manuela Vargas, Mario Maya, La Paquera de Jerez, Diego el Cigala, José Mercé and Antonio Canales, among many others. Paco de Lucía presented 'Entre dos aguas' here, Isabel Pantoja made her professional debut here, and Sabicas played long nights here when he visited Spain. Today's programme brings in names such as Belén López, Olga Pericet, Eduardo Guerrero, Alfonso Losa, Mercedes Ruiz, Jesús Carmona, María Moreno and Manuel Liñán, every night of the week.
The Kitchen
Chef David García comes from Bilbao, where he started in his family's restaurant, Tamenis, before he was 18. He studied at the EIDE school in Santurtzi, trained with Martín Berasategui, spent time at El Bulli and Mugaritz, and cooked at Nerua in the Guggenheim before moving to Madrid to open Álbora. His cooking has Basque roots and is built on broths, bases and gravies from organic, carefully sourced produce.
The Dinner Menus
Dinner with the show comes as set menus, with the show ticket priced on top. The Soleá (€49.95) runs from a smoked cheesecake with fried tomatoes to grilled salmon with smoked leek sauce, old-fashioned stewed free-range chicken and caramelised French toast with banana ice cream. The Alegrías (€65.95) adds scallop carpaccio with coconut ajoblanco, sea bass with a gilda and roast rack of lamb. The tasting menu (€79.95) brings Motril prawns with piparras and a roasted and stewed pigeon, and there are vegan (Taranto) and gluten-free (Bulerías) menus too.
