Background

About Albor

The Story

Albor is the restaurant of Álvaro and Borja, two friends whose names give it its own: albor also means the dawn, the beginning of something. It's on Calle Juan Martín el Empecinado in the Palos de la Frontera barrio of Arganzuela, a quiet, bright, casual room cooking Spanish food with a modern-creative bent rather than sticking to the traditional script. It's listed in the Guía Repsol.

The Cuisine

Spanish, cooked with a modern-creative bent. The menu is on Albor's own site.

The Daily Dishes

Alongside the carta, Albor runs a dish of the day at lunchtime, €17 with bread and a drink: a Caesar salad on Mondays, Galician-style ham hock with cabbage and crushed potato on Tuesdays, a fish caldereta on Wednesdays, lasagne on Thursdays, veal roast beef with creamy potato on Fridays and a rice of the day on Saturdays. Sundays are 'Domingos de Arroz', with a different rice every week, such as an arroz del señoret with red mullet (€24). Public holidays are excluded.

The Wine List

The wine list is broader than you'd expect from a neighbourhood room: manzanilla and oloroso by the glass, grower and house Champagnes from André Clouet, Nicolas Maillart, Lallier and Joseph Perrier, whites from Albillo and Tempranillo Blanco to Albariño, a tinaja-aged Malvar from the Madrid area and a Malvasía de Sitges, and Rioja reds up to La Cueva del Contador. Several bottles are poured by the glass from about €3.

The Chefs

Álvaro, Borja

The Team

Albor is run by the tandem Álvaro and Borja, whose names the restaurant is built from; the two learned the trade studying and working before opening their own kitchen.
