The Story
Unmar is the restaurant inside Infinito Delicias, a project that frames cooking as a way to build community and conversation as much as to feed people. The space was conceived around circularity: designer Lucas Muñoz built its tables and chairs from FSC-certified pine left over from the fit-out, and much of the lighting is made from reclaimed parts.

What the kitchen calls 'Gran Mediterráneo': a wide read of the Mediterranean that gathers recipes from Spain, France, Italy, Greece, Turkey, Morocco and beyond, cooked from seasonal, local and often organic produce with a low-waste philosophy. Vegan and vegetarian options run throughout.
