Background

About Kresala

The Story

Kresala, meaning sea spray/salt air in Basque, is the Barcelona outpost of the Sagardi Group, bringing authentic Basque asador tradition to the Port Olimpic waterfront. The motto 'Bascos al Foc' (Basques on Fire) captures the concept: wild fish and shellfish from Cantabrian and Mediterranean markets, prepared on a custom 5-metre Josper grill. The project is led by grill master Gregorio Tolosa, who perfected his craft at the legendary Asador Bidea2 in Navarra, and backed by brothers Mikel and Iñaki Lopez de Viñaspre, who have over 30 years of experience as pillars of Basque cuisine through the Sagardi Group. The restaurant draws inspiration from the fishing villages of the Basque coast: Orio, Getaria, Hondarribia, and Bermeo.

The Cuisine

Kresala specialises in Basque-style grilled seafood, whole fish by weight from the daily catch, prepared over charcoal with minimal intervention. The a la carte menu features grilled sea bream (€16/100g), turbot (€14/100g), sole (€16/100g), monkfish (€10/100g), and premium cuts like bluefin tuna 'txuleton del mar' (€38). Lobster comes as salpicon (€90), grilled (€16/100g), Menorcan-style (€110), or in soupy rice (€120). Raw starters include Gillardeau oysters (€38/half dozen), a trio of oysters with tuna tartare and wagyu essence (€24), and Beluga caviar (€60/10g). Meat options include aged Galician txuleta (€19/100g) and Japanese wagyu (€30/100g). The tasting menu (€170pp, min 2) runs 9 courses from artisan Betelu butter through lobster salpicon, hake kokotxas, and wild grilled fish to the signature Alaska dessert.

The Team

Grill master Gregorio Tolosa leads the kitchen, bringing his expertise from Asador Bidea2 in Navarra, one of the Basque Country's most respected asadors. The restaurant is backed by Mikel and Iñaki Lopez de Viñaspre, brothers who co-founded the Sagardi Group and have over 30 years of experience in Basque cuisine.
