Origo is the sourdough-and-specialty-coffee bakery François de Halleux opened in Gràcia in 2018, after more than a decade at Google and an unpaid apprenticeship at a bakery in France. The name means "origin" in Latin, and the whole project is a return to basics: naturally leavened loaves made by hand from stone-milled organic flour, with a focus on ancient and local grains sourced through a farmer near Girona.

What sets it apart is how far back down the chain it goes: the roaster works directly at origin, most famously with the Paz family's Finca San José in Santa Bárbara, Honduras, where Bourbon and Catuaí grow at around 1,450 metres and turn up as its long-running best-seller.
