Larrosa is a chef who passed through kitchens including Ferran Adrià and Carme Ruscalleda before meeting Úrsula in Lima; the two spent years travelling Peru and the Amazon studying cacao. The name stands for Land Origin Traceability, and that idea shapes the whole project: coffee here is roasted on-site in Barcelona, focused on micro-lots of Peruvian single origin, while the chocolate is made bean-to-bar from single-origin Peruvian cacao.
