Gyoza Bistro started during the COVID pandemic as a dark kitchen on Carrer de l'Avenir, created by chef Karel Schroder and co-owner Alejandro Lasplasas. Frustrated with generic gyozas that were always chicken, pork, or shrimp with soy sauce, they developed a gourmet gyoza concept using premium Mediterranean ingredients. Their philosophy: 'Poco, pero bien. Poco, pero diferente.' (Little, but well. Little, but different.) The concept proved so popular that they moved to a permanent location on Carrer de la Diputacio.

Chef Karel Schroder serves gourmet gyoza dumplings with a focus on quality: 90% of each filling is the core ingredient, knife-cut rather than machine-processed, with thin handmade wrappers. Each gyoza comes with its own custom sauce.
