Gyoza Bistro is a gourmet gyoza restaurant on Carrer de la Diputacio in the Eixample, created by chef Karel Schroder and co-owner Alejandro Lasplasas. Started as a COVID dark kitchen, the concept reinvents the gyoza with premium Mediterranean fillings -- each 90% core ingredient, knife-cut, and paired with a custom sauce.

Background

About Gyoza Bistro

The Story

Gyoza Bistro started during the COVID pandemic as a dark kitchen on Carrer de l'Avenir, created by chef Karel Schroder and co-owner Alejandro Lasplasas. Frustrated with generic gyozas that were always chicken, pork, or shrimp with soy sauce, they developed a gourmet gyoza concept using premium Mediterranean ingredients. Their philosophy: 'Poco, pero bien. Poco, pero diferente.' (Little, but well. Little, but different.) The concept proved so popular that they moved to a permanent location on Carrer de la Diputacio.

The Cuisine

Chef Karel Schroder serves gourmet gyoza dumplings with a focus on quality: 90% of each filling is the core ingredient, knife-cut rather than machine-processed, with thin handmade wrappers. Each gyoza comes with its own custom sauce. Signature varieties include duck with foie-Port wine sauce, sirloin with the 27-ingredient Cafe de Paris sauce, bikini iberico trufado with gorgonzola (8.40 EUR), funghi porcini with comté (7.80 EUR), and butifarretes with alioli (7.20 EUR). The delivery menu also includes Vilanova prawn gyoza with ponzu and aubergine parmigiana. Around 30 EUR per person without drinks.

The Team

Chef Karel Schroder co-founded the restaurant with Alejandro Lasplasas, who is co-founder of the Food&Magic group that commercialises the famous Cafe de Paris sauce. Google reviewers give it 4.6/5 from 915 reviews.
