The Story
Fat Veggies was founded around 2020 by three Venezuelan friends: chef Juancho Martini, his brother Aquiles Martini, and childhood friend Alex de Mendoza. Juancho trained with Carlos Garcia in Caracas, Yoshihiro Narisawa in Tokyo, and Rafa Pena at Gresca in Barcelona. The concept applies the Venezuelan fire-cooking tradition to seasonal, organic, locally-grown vegetables -- no gas or electricity is used in the kitchen. Everything is cooked over custom-built bonfires on refractory bricks. The group also runs Fat Barbies (meat) at the same address under La Oficina Tropical.
The Cuisine
The kitchen team cooks all food over fire using robata grills, slow smoking, and open flame techniques. A short a la carte menu features seasonal croquettes, fat tacos with romesco, chickpea blinis, charred carrots, and Thai green curry with kales. A Veggie Tasting Menu is available at 45 EUR, with an optional local wine pairing for 24 EUR. Belgian fermentologist Celine handles the in-house fermentation programme (kombucha, pickles, ferments).
