Background

About Fonda Pepa

The Story

Fonda Pepa opened in 2020, founded by chefs Pedro Bano and Paco Benitez, two friends who met at the Sant Pol cooking school where Pedro was teaching. Pedro went on to teach at the Hofmann School, while Mexican-born Paco worked at Caelis (Michelin-starred) and spent time at Noma in Copenhagen. The name combines Pe (Pedro) and Pa (Paco), and also references La Pepa, the nickname for Spain's 1812 Constitution. They took over the former Can Robert space, which had over 30 years of history in Gracia. The pair also run Cansaladeria Pedro Paco, an ingredient shop across the street.

The Cuisine

Chefs Pedro Bano and Paco Benitez serve Catalan cuisine with Mexican influences and French technique, driven by seasonal market produce and cooked on a Josper grill oven. The frequently changing menu features socarrat rice with prawns, capipota with aioli, croquetas de rustido, cannelloni, chipotle bravas, lamb neck with guajillo chili and romesco, crispy piglet, and homemade desserts. Around 40 EUR per person without drinks.

The Team

Chef-owners Pedro Bano (Catalan, ex-Hofmann School) and Paco Benitez (Mexican, ex-Caelis, ex-Noma) lead the kitchen. Anna manages the dining room. In the early days, Pedro and Paco did everything themselves.
