The Story

Origo is the sourdough-and-specialty-coffee bakery François de Halleux opened in Gràcia in 2018, after more than a decade at Google and an unpaid apprenticeship at a bakery in France. The name means "origin" in Latin, and the whole project is a return to basics: naturally leavened loaves made by hand from stone-milled organic flour, with a focus on ancient and local grains sourced through a farmer near Girona. You watch the bakers work through glass into the workshop. Alongside the bread come croissants made with DOP Charentes-Poitou butter, pain au chocolat, and the cardamom and cinnamon rolls Origo is known for. The coffee is properly specialty and changes weekly, with beans rotating through Barcelona and Spanish roasters including Slow Mov, Morrow Coffee, and Harmony Roasters. A second, larger location designed by architect Isern Serra later followed in Sant Antoni.
