Restaurante Dantxari is a Basque-Navarre restaurant in Madrid's Argüelles neighbourhood, open since 1997. It was founded by Ángel Alonso, Eduardo Navarrina and Jesús Medina, and today head chef Rayner Méndez Medina, trained for years under Alonso, runs the kitchen, with Manolo and Jesús Medina in the dining room. It's known for txangurro lasagna and Tolosa beans with chorizo and morcilla, and a new cook, Luis Martín Lima, joined the team in 2026.

About Restaurante Dantxari

The Story

Restaurante Dantxari is a long-established Basque restaurant in Argüelles, open since 1997 and largely unmoved by trends. The house line, set by founding chef Ángel Alonso, is 'la difícil sencillez', the difficult simplicity, alongside the more elaborate dishes.

The Cuisine

Beyond the txangurro lasagna and the Tolosa beans, the menu runs to bacalao croquetas, a fragrant fish and seafood soup, cod prepared in the style of Club Ranero, and a house solomillo.

An Old House Feel

Dantxari's room looks like an old Basque house, with wooden tables, stained-glass windows and old clocks behind a dark wood facade, and it has kept the same address on Calle Ventura Rodríguez since it opened in 1997. The carta is a tour of classic Basque cooking made to be enjoyed at the table, and the restaurant also runs take-away and delivery of its dishes.

Tasting Menus

Alongside the carta, Dantxari offers set menus that change through the year to follow the season. The September 2026 menu brought five new dishes by Luis Martín Lima, among them a spinach salad with prawns, mango and Iberian jowl, burrata and parmesan stuffed pasta with tomato compote, and braised oxtail with caramelised onion and olive-oil bread, paired with a Pago de Cirsus rosé from Navarra. Other menus include dishes such as Iberian pork cheeks with potato parmentier, the steamed Solomillo Dantxari and a warm pantxineta, the almond-cream puff pastry. Groups have their own menus on request.

The Team

Dantxari opened in mid-1997, founded by three professionals from well-known Madrid kitchens: chef Ángel Alonso, from El Amparo, Eduardo Navarrina, from Jockey, and Jesús Medina, from Gaztelupe. Alonso and Navarrina have since retired. Today the restaurant presents its partners as Rayner Méndez Medina in the kitchen, who trained for years under Alonso, and Manolo and Jesús Medina in the dining room. In September 2026 it announced a new chef in the kitchen team, Luis Martín Lima, who created that month's tasting menu.

Along Calle Ventura Rodríguez in Argüelles, about 900 m north-west of Gran Vía and 1500 m south-west of Chamberí, Restaurante Dantxari has been running more than twenty years, its dark wood facade and stained-glass windows still giving it a properly old-school feel.
