About Mama Uma
The Story
Mama Uma opened in 2020, in the middle of the pandemic, and has been on the second floor of the Mercado Barceló since, with pop-ups, classes, events and catering along the way. Its mission, in its own words, is to bring the real thing to Madrid: Korean flavours made accessible with the best product it can find, choosing product over profit.
The Cuisine
Korean, on a deliberately small menu. Bibimbap mixes sushi rice, black rice and red quinoa with seasonal namul, a slow-fried egg and a choice of beef, pork, chicken or shiitake bulgogi and three sauces. KFFC, Korean fried farm chicken, is double-fried and comes plain, yangnyeom, soy-honey glazed or boomin, with vegan cauliflower and boneless options.
Sides and combos
Sides include tteokbokki with fried chicken, bo ssam and KFFC ssam wraps, handmade steamed mandu (pork belly, a vegan Pyongyang-style kimchi version and prawn), house-fermented kimchi and pickles. Weekday combos run from €15 (students, with ID) to €17.20, with a €39 combo for two; mains on their own are around €15 to €16.
