The Story

La Bien Aparecida brings the coastal cooking of Cantabria to the Barrio de Salamanca. The kitchen leans on northern Spanish produce, anchovies, seafood and slow-cooked classics, in the traditional register the region is known for.

The Cuisine

Traditional and ingredient-led, with Cantabria running through it. The carta takes in ensaladilla, Cantabrian anchovies, creamy lacón croquettes, fried squid the way Santander does it, rice with clams, hake in salsa verde and veal callos to a Liébana recipe. Dishes suitable for coeliacs are marked, and some others can be adapted.

The Kitchen

La Bien Aparecida, named after the patron saint of Cantabria, brings the coastal, traditional cooking of that region to Calle de Jorge Juan, in Recoletos, with chef José Manuel de Dios at the stove. It is the Madrid sibling of La Maruca, and several dishes on the carta nod to Cañadío in Santander with the date 1981. It is recommended in the Michelin Guide and holds one Repsol Sol.

It opened in 2015 as the group's third restaurant, after the original Cañadío in Santander, which dates from 1981, and La Maruca. Alongside the carta, de Dios has used tasting menus to show his more personal side, a cooking that turns a humble thistle into a centrepiece as readily as it does a Cantabrian anchovy. OAD placed La Bien Aparecida 669th in its Europe Top Restaurants list for 2025 and 589th in 2026.

The Carta

Starters run from the house ensaladilla rusa and Cantabrian anchovies to creamy lacón croquettes, Santander-style fried squid, cuttlefish in its ink, the Basque purrusalda and pan-fried Galician clams in the Cañadío 1981 style, mostly €19 to €35. Rice dishes include Pedreña-style clam rice and rice with cuttlefish or free-range chicken, and fish centres on line-caught hake: in green sauce with clams, battered with garlic, baked with pil-pil, with Champagne sauce, or as a roast tail meunière. There is also veal callos to a Liébana recipe. The carta marks which dishes are suitable for coeliacs and which can be adapted.

The tasting menu costs €80, with an optional wine pairing for €42.

The Room

The dining room is quiet and elegant without being stiff, easy to talk in, which makes it a regular for business lunches. There is a terrace out front on Jorge Juan.

La Bien Aparecida is open every day from 11:00 to 01:00, with the kitchen serving lunch from 13:00 to 16:00 and dinner from 20:00 to 23:00, until 23:30 on Friday and Saturday. The Team

José Manuel de Dios leads the kitchen. Born in Puente Viesgo, in Cantabria, in the early 1980s, he trained at the Escuela de Hostelería de Cantabria, cooked with Pedro Subijana and completed his training at the three-Michelin-star Bras in Laguiole, under Michel Bras. He arrived at La Bien Aparecida as second in the kitchen and took charge of it at the start of 2017. The restaurant belongs to Grupo Cañadío, the Santander group of Paco Quirós and Carlos Crespo.
