Flavia has cooked Amalfi-inspired Italian food in Barrio de Salamanca for more than a decade, and its entire menu, pizza and pasta included, is gluten-free, an idea the family traces to the founder's mother's celiac diagnosis. A few streets over in Malasaña, Okashi bills itself as the first certified fully gluten-free and lactose-free Japanese restaurant in the city. Neither is the norm. Most of the restaurants on this list aren't fully gluten-free kitchens; they mark specific dishes as coeliac-safe on the carta, or say the kitchen can adapt if you flag it when booking. This guide keeps those categories separate rather than lumping every restaurant that has ever served a gluten-free dish into one list.

What does 'gluten-free' mean on a Spanish menu?

'Sin gluten' is the Spanish term for gluten-free. Spanish kitchens that cater seriously to coeliacs typically use corn, chickpea, rice or tapioca flour in place of wheat for bread, batters and pasta, and some run a separate fryer or oven to reduce cross-contamination. Not every restaurant that offers a gluten-free dish states whether it has taken that extra step, so it's always worth asking directly.

Fully gluten-free versus gluten-free options, and why the difference matters

A restaurant that is fully gluten-free cooks its entire menu without wheat, barley or rye, which is the safest option for coeliac diners. A restaurant with 'gluten-free options' may serve wheat elsewhere in the same kitchen, which raises the risk of cross-contamination even on a dish that's naturally gluten-free. Both categories are useful, but they aren't the same thing, and this guide tries not to blur them.

What is a dedicated coeliac or gluten-free menu?

Some restaurants publish a separate menu specifically for coeliac or gluten-free diners, distinct from their regular carta, sometimes as its own PDF or a named tasting menu. That's a stronger signal than a handful of dishes marked gluten-free on the main carta, since it usually means the kitchen has thought through the whole meal rather than one substitution.

Why some Michelin-listed restaurants handle coeliac diners at the booking stage

Tasting-menu restaurants that serve a fixed or shared format, where the whole table eats the same courses, generally need dietary restrictions flagged in advance rather than adjusted table-side. That's standard practice across fine dining, gluten-free or not, and it's the reason several higher-end entries on this list ask you to mention coeliac needs when you book, not when you arrive.

How We Built This List

Years of Eating, Asking, and Going Back

We started from the Madrid restaurants we've profiled, filtering to ones whose own published information (carta, FAQs, or the restaurant's own site) states a real gluten-free provision, not just a passing mention. We checked every claim against each venue's own wording rather than paraphrasing it into something stronger, and we left out a restaurant, RavioXO, whose own information says directly that it has no coeliac menu. We also read the specialist gluten-free travel and coeliac directories that cover Madrid, including How to Coeliac, Wheatless Wanderlust and celicidad.net. Several of the fully gluten-free specialists those sites cite repeatedly, including Okashi's Lavapiés sibling, LaLina, Grosso Napoletano's gluten-free locations, As de Bastos, Artemisa and Waraku, don't have a Guidavera page yet, so we've left them off rather than write around a gap.

The kitchen traces the idea to the founder's mother, who was diagnosed with celiac disease and couldn't find an Italian restaurant with a full gluten-free carta, so celiac and gluten-intolerant diners can order across the whole menu rather than a handful of marked dishes. The carta runs from a Margherita pizza (€14) through Spaghetti Carbonara gli originali (€20) and Tagliatelle Wagyu alla bolognese (€26) to Tiramisù (€8) for dessert.
