The Story

La Huerta de Tudela is Ricardo Gil's Madrid restaurant on Calle del Prado, in the Barrio de las Letras, and it marked 15 years in the city in 2026. Gil grew up in a family of restaurateurs with more than half a century in the trade, and made his own name with Restaurante 33 in his home town of Tudela, in Navarra's Ribera, building it around the produce of the local huerta on the banks of the Ebro. Madrid got the same idea: the vegetables of the Tudela ribera as the flagship of the house, cooked with tradition and, in Gil's words, lively flashes of innovation. It is listed in the Guía Repsol.

Vegetable-focused and traditional, ingredient-led cooking with produce at the centre of the plate, from a region famed for it. It runs à la carte alongside set menus, including a dedicated tasting menu for vegetarians, vegans and celiacs, all on its own site.

The Vegetables

The Tudela produce leads the carta: the 'ugly' Tudela tomato with an emulsion of its own skins and black-olive oil (€18), a salmorejo made with Tudela tomato, pochas (fresh white beans) from Tudela with young pickled guindillas, a seasonal menestra with vegetable cream and confit ham, a crown of fried artichokes with foie, glass peppers roasted over wood with a fried egg and cured Ibérico papada, a pisto of Ribera vegetables with leek cream and chickpea hummus, and a patata duquesa 'a la importancia' in green sauce with borage and red quinoa. White Tudela asparagus with olive mayonnaise is one of the dishes the house is best known for in season.

Fish, Meat and the Set Menus

Mains run from about €19 to €37: pochas with cod cocochas, sea-bass meatballs in fresh green-pepper sauce, hake cocochas al pil-pil, black monkfish with beurre blanc and Almadraba tuna tataki on the fish side; beef fillet, crisp boned pig's trotters, bull meatballs in red-wine stew, milk-fed lamb shoulder slow-roasted for 12 hours, a spicy hen pepitoria and the house callos on the meat side. Desserts are €9 to €10, led by a Bourbon-vanilla torrija with Madagascar vanilla ice cream. There are three set menus, served to the whole table: a vegetable tasting menu (€48), a Gastronómico with choices at each course (€48), and a menu for vegetarians, vegans and coeliacs (€45), drinks extra. There's also a separate bar.
