Devil's Cut is a cocktail bar on Calle del León, in the Barrio de las Letras, that took over Casa Pueblo, a neighbourhood bar from 1983, in 2024 and kept its old-Madrid charm. Its angel-to-devil theme nods to Shingo Gokan's years running the bar at New York's Angel's Share. It won Best New International Cocktail Bar at the 2025 Tales of the Cocktail Spirited Awards, opens at 18:00 every day and takes walk-ins only.

About Devil's Cut
The Story
Devil's Cut sits in what was Casa Pueblo, a much-loved neighbourhood bar that opened on Calle del León in 1983, was designed by one of its founders and served the barrio until 2023. In 2024 it became Devil's Cut, keeping the old room's charm. The concept takes its cue from Shingo Gokan's ten years as head bartender at the legendary Angel's Share in New York, until 2016, and plays on an angel's transformation into a devil. In 2025 it won Best New International Cocktail Bar at the Tales of the Cocktail Spirited Awards.
The Cuisine
Cocktails are the point: creative house serves and classics such as the Negroni. Food is a short list of Japanese-Spanish small plates, from edamame and okonomiyaki to jamón ibérico and manchego. The list is published as a PDF on the bar's own site.

Cosy, keeping the old Casa Pueblo room, with cocktails as the whole point. It opens at six in the evening and runs to two, later at weekends, and it works for a group. There are no reservations, so the door is the queue.
