Salmon Guru is Argentine bartender Diego Cabrera's cocktail bar on Calle de Echegaray, in the Barrio de las Letras. It opened in 2016, reopened in May 2023 after a full renovation, and has placed on the World's 50 Best Bars at #15 in 2022, #23 in 2024 and #37 in 2025. It holds a Solete in the Guía Repsol, takes walk-ins only and opens at 16:00 every day.

About Salmon Guru

The Story

Argentine bartender Diego Cabrera opened Salmon Guru on Calle de Echegaray in 2016, and it soon became a fixture of the World's 50 Best Bars. It climbed to #15 on the 2022 list, then placed #23 in 2024 and #37 in 2025, took #46 on the first Europe's 50 Best Bars in 2026, and sits at #66 on the World's 50 Best Bars extended 51–100 list for 2026. It also holds a Solete in the Guía Repsol. In 2023 it shut for a top-to-bottom renovation and reopened that May with a new look and a new cocktail list. In Cabrera's words at the time, everything was new except the name. The brand has since travelled, with Salmon Guru bars in Dubai and Milan.

The Cuisine

The cocktail list leans on house technique and big flavours: a tangerine and rose oleo saccharum, a solera-aged serve, chipotle syrup scented with absinthe, a sour built on mussels and tomato water, and a drink that reworks an al pastor taco with lime and charred pineapple syrup. There's a non-alcoholic list as well, and an eclectic food carta to eat alongside. Both menus are published on the venue's own site.

Salmon Guru is Diego Cabrera's bar. The Argentine bartender opened it in 2016 and led its relaunch in 2023, and the name now travels with him to sister bars in Dubai and Milan.
