Guru Lab is the lab restaurant of Salmon Guru, on Calle de Echegaray in the Barrio de las Letras: a small room where the team's food and cocktails are developed, served and paired. The menu card is signed by Jorge Sardiña, Diego Cabrera and Oscar Fuentes. Plates like a black prawn aguachile with lapsang tea or spice-cured Ibérico presa with guava hoisin sit beside cocktails such as rum with shiitake and amontillado, and there's a €65 pairing menu. Dinner Thursday to Saturday; closed in August.

About Guru Lab

The Story

Guru Lab presents itself as a living laboratory where food and drink, 'solid and liquid gastronomy', are created, transformed and enjoyed. Cooks, bartenders, growers, biologists, artisans and artists feed into it, ideas travel back and forth with colleagues from around the world, and on its open days the team shares what it has been working on. It is run by the Salmon Guru group, whose cocktail bar is on the same street.

The Cuisine

The focus is experimental: creative plates paired with drinks, with cocktails treated as seriously as the food. It's open for dinner Thursday to Saturday, with events on other days.

Se Come, Se Bebe, Se Marida

The carta has three parts. To eat: black prawn aguachile with lapsang tea and avocado-yuzu cream (€26), a blood-orange escabeche with roast pumpkin, blackberries and fresh cheese, confit artichoke with a mushroom-and-coffee sauce, scallop with fermented-chilli hollandaise, a crispy plantain tostada with braised cheek and pickled pineapple, spice-cured Ibérico presa with guava hoisin and wild rice (€28), the catch of the day, and a smoked 85% cacao dessert with caramelised banana, tamarind and miso. To drink, cocktails at €14–16, or a half for €8–9: tequila with tomato and basil, lychee with vodka and sake, gin with pad thai and tamarind, mezcal with palo santo, rum with shiitake and amontillado. To pair: a €65 menu of three starters, a main and dessert, each matched with a contemporary cocktail.

Events and Workshops

Sunday to Wednesday the space opens on request for groups, workshops, masterclasses, team-building and corporate events, booked through the Salmon Guru events team. The lab also hosts guest collaborations under the Guru Hub banner.

Nearby

Centro is Madrid's historic core, the district that holds Puerta del Sol, Plaza Mayor and the long climb of Gran Vía all at once. The eating is dense and varied, from old-school taverns and chocolaterías that have not changed their counters in generations to newer rooms opening along Calle de Alcalá and San Bernardo.
