Chuka Ramen Bar opened on 14 November 2014 on Calle de Echegaray, in the Barrio de las Letras, as one of the first true ramen bars in Madrid, and it holds a Solete in the Guía Repsol. Its founders, John Husby, a cook from Portland who had worked at David Chang's Momofuku in New York, Rodrigo García Fonseca and Lorena Mauri, built it around chuka, the Japanese version of Chinese cooking that gave the world ramen and gyoza. Today there are three ramen, Hakata tonkotsu, Tokyo shoyu and tantanmen, with broths simmered for more than 24 hours, plus bao buns, dumplings and seasonal plates.

The Story

Chuka opened on 14 November 2014 in a 70-square-metre space that had been the Japanese restaurant Aki. Its founders were John Husby, from Portland, who had cooked in Madrid at Las Cuatro Estaciones and Aloboroque before working at Momofuku in New York, Rodrigo García Fonseca, a self-taught chef from San Sebastián, and Lorena Mauri; Husby and García Fonseca had met at the Kitchen Club cooking school and run a pop-up supper club together. Husby travelled around Japan to study real ramen bars before opening, but chose table service over the Japanese ticket-machine model. It holds a Solete in the Guía Repsol.

The Cuisine

Chuka: Chinese cooking as it evolved in Japan over the last century, when Chinese immigrants settled there, the root of dishes like ramen and gyoza. The house version builds thick broths cooked slowly for more than 24 hours from pork bones or miso and chicken, served with Japanese noodles, pork belly, spring onion and toppings, alongside bao buns, dumplings and seasonal dishes.

The Ramen

There are three bowls at €20: Hakata tonkotsu, a white paitan broth with thin straight noodles, pork chashu, wood-ear mushrooms, beni shoga and a marinated ajitama egg; Tokyo shoyu, a clear assari broth with wavy noodles, chashu, wild spinach and bamboo; and tantanmen, Japan's version of dan dan noodles with spiced minced meat. A vegetarian toasted-miso ramen is usually available off the menu.

Buns, Dumplings and Seasonal Plates

Bao buns (€8 to €12) come filled with roast pork belly and cucumber kimchi, Korean fried chicken with gochujang, tiger prawn in satay, shiitake, soft-shell crab or pastrami. The dumplings are a chifa-style gyoza of aged beef and ají amarillo and Xi'an-style prawn wontons in chili oil and black vinegar. The seasonal section brings Cantonese barbecue Iberian pork, a DIY ebi chili taco, a 'fake nigiri' of marinated picanha, tteokbokki with squid and Sichuan mapo aubergine; desserts are a mochi doughnut and a dark chocolate and white miso tart. Beers include Asahi and Kirin.

Booking and Hours

Chuka opens Tuesday to Saturday for lunch (13:30 to 16:00) and dinner (20:00 to 23:00), and closes on Sunday and Monday. Tables can be booked online; for a same-day waitlist, call from 12:00. The menu isn't suitable for coeliacs.

A compact, cosmopolitan room with a bar, high and low tables, and the kitchen behind glass by the door, so the counter seats come with a show. It's a full-service restaurant rather than a ticket-machine ramen shop, with cocktails, sake and wine, and tables are hard to get: book ahead, or try the bar, which takes walk-ins in order of arrival.

Calle de Echegaray 9, in the Barrio de las Letras in Madrid's Centro district, a few minutes' walk east of Puerta del Sol, next door to the classic sherry bar La Venencia.
