Background

About La Maruca - Velázquez

The Story

La Maruca Velázquez opened in 2013 as the first Madrid house of La Maruca, the brand of Grupo Cañadío, the Santander group that began with Cañadío in 1981 and whose founder Paco Quirós brought the northern kitchen to Madrid. Like the group's other houses it takes its name from Santander. Today there are four Marucas in Madrid, on Velázquez, the Castellana, López de Hoyos and in Azca. This one is bright, with a lively bar and a covered terrace, and it's listed in the Michelin Guide.

The Cuisine

Cantabrian cooking for sharing, with the group's classics throughout. The carta runs from Cantabrian anchovies with roast peppers and the house ensaladilla to croquetas made with cocido meat, bonito empanadillas 'like Angélica's', the La Maruca bravas, huevos rotos with Potes picadillo and a menestra with ham and egg. Heartier plates include a Cocido Labaniego served in a single pour, a fish soup in two stages, black fideuá of Santander cuttlefish, the original hake 'de rula', pularda cannelloni with foie sauce, boneless roast lamb and a San Jacobo of Potes loin.

The Desserts With Dates

Two desserts carry the year 1981, when the first Cañadío opened in Santander: the lemon tart, which has become a La Maruca signature, and the Cañadío cheesecake. There are also puff pastries over pastry cream and a torrija with 'false' mascarpone ice cream. The carta marks which dishes are safe for coeliacs and which can be adapted, and there's a separate allergen carta.

All-Day Hours

The doors open at 08:00 on weekdays and 09:30 at weekends and holidays for breakfast, and the room stays open until 01:00, with the kitchen serving lunch from 13:00 to 16:00 (16:30 from Friday to Sunday) and dinner from 20:00 to 23:00. The nearest metro stops are Serrano and Velázquez on Line 4.
