Hotaru is a contemporary Japanese sushi bar on Calle de Alcalá 99, by the Retiro end of the Salamanca district, from the restaurant group Grupo Costeño and led by chef Alejandro Pérez. The cooking fuses Japanese flavours with ingredients from elsewhere, from robata skewers and short-rib gyozas to truffle sashimi and temakis, with a set omakase and a separate 12-course omakase counter, Amaterasu.

The Story

Hotaru arrived in Madrid presenting itself as intimate, provocative and unique, built on Japanese tradition and aesthetics: a solemn space celebrating harmony, precision and technique, for real devotees of sushi. It's run by Grupo Costeño with chef Alejandro Pérez at the helm. Alongside it, the same team runs Amaterasu, a 12-course omakase where simplicity and precision set the tone, with set pairings or wine à la carte.

The Cuisine

Contemporary sushi with fusion touches. The 2026 carta runs from robatayaki over Japanese charcoal (broccoli with spicy mayo, 48-hour pork belly, A5 Wagyu with yuzu kosho, prawns with smoked butter, yakitori) to sashimis such as truffle sashimi with caviar, hamachi with serrano chilli, totoaba and red snapper, plus short-rib, mushroom-truffle, prawn and Wagyu gyozas, temakis, rolls like the red dragon and spider roll, nigiri and bowls.

Omakase Two Ways

Hotaru's own Omakase Experience (€64) moves through Málaga clams, a broccoli skewer, tuna toast, short-rib gyozas, a yellowtail temaki and a run of nigiri (salmon, hamachi, chutoro, butterfish, unagi) to a seasonal mochi. Amaterasu is the more focused counter: twelve courses of omakase with set pairings.

Desserts and Practicalities

Desserts include a banana crunch with dulce de leche, macadamia or pistachio cheesecake and a Nutella mostachón ice-cream cake. Hotaru opens every day from 13:00 to 01:00; book online or call 916 79 87 59, or message on WhatsApp.
