Alejandro Pérez, a Mexican chef, began his career at 18 with the Suntory group before training under chefs at Nobu, Morimoto and Iwashi. He joined the Costeño Group in 2017 to develop Hotaru, the group's first traditional Japanese restaurant, and also created Ryoshi, an izakaya-style concept for the group. Early years
Alejandro Pérez, a Mexican chef, started his culinary career at 18, working with the Suntory group for a Japanese restaurant opening.
Career
He trained under chefs at Nobu, Morimoto and Iwashi, and travelled to Japan and cities including Houston, Chicago, Barcelona and London to deepen his knowledge of Japanese and Asian gastronomy. In 2017 he joined the Costeño Group to develop Hotaru, the group's first traditional Japanese restaurant, and also created Ryoshi, an izakaya-style concept for the group. Hotaru opened first in Mexico before expanding to Madrid in 2022, the group's first restaurant outside the country.
Philosophy
His cooking fuses Japanese flavours with ingredients from other parts of the world, focused on contemporary sushi that highlights the quality of the produce. At Hotaru Madrid, the centrepiece is Amaterasu, an omakase with set pairing options.
