HER is a modern restaurant on the corner of Calle Hermosilla 4, just off Calle Serrano in the Salamanca district. The Story

HER, short for Hermosilla, presents itself as a modern eatery in the heart of the Salamanca district. Italian chef Marco Carboni curates the concept: food inspired by Mediterranean cooking with a focus on local artisan products, and a small wine list from low-intervention producers. The kitchen works with talented, ethical small producers and aims to do justice to what they grow.

The Cuisine

Mediterranean-inspired, with Latin touches. The spring 2026 menu runs from 'almohadillas' (bread pillows with Ibérico ham and parmesan foam), beetroot hummus and confit duck rolls with tamarind to raw plates (tuna cones with guacamole and rice, green ceviche, octopus carpaccio, shrimp aguachile, tuna tiradito); Josper-grilled catch of the day, zarandeado sea bass and Wagyu entrecôte; pizzas such as sobrasada with burrata or mortadella with salsa macha; and fresh pasta, from spinach-ricotta ravioli to truffle gnocchi.

What to Order

The aubergine mille-feuille with burrata, mozzarella and tomato and the burnt cauliflower with chilli paste and macadamia cream are the plates people come back for, with the green ceviche and a pizza to share. Many dishes come in half or full sizes (the starters from €8, raw plates €14 to €24, pizzas €19, Josper mains €27 to €32), so it's easy to build a table of several things. Bread with burnt-aubergine butter, goat cheese and harissa oil is €2.50.

Practicalities

Recoletos runs along the grand boulevards between Plaza de Cibeles and Puerta de Alcalá, where the buildings are stately and the pavements are wide.
