García de la Navarra is a family restaurant and vinoteca in the Jerónimos quarter. There's no fixed carta: the kitchen runs on the day's chef's suggestions, and the wine keeps the same daily rhythm, with by-the-glass pours chalked up on a slate and served at the right temperature.
The Cuisine
The kitchen cooks traditional Spanish home food from quality, seasonal produce: vegetables from Navarra, game like partridge and venison, stews, Galician meat, canned fish from the Cantábrico and almadraba tuna. Daily suggestions run to seasoned fresh artichokes, roasted red peppers, Navarra cardoon, black truffle croquetas, a chicken broth and partridge a la toledana. The other pillar is the cellar, more than 2,000 labels, kept at temperature, with wines by the glass chalked up on a slate.
The Brothers
García de la Navarra is a family restaurant and vinoteca run by two brothers: Pedro in the kitchen and Luis in the dining room and cellar, with a bar at the entrance, a dining room and a terrace on Calle de Montalbán, by the Prado. It holds one Repsol Sol.
Vegetables are the house's great strength: borage, mangetout, chard stalks and a five-vegetable medley in season, alongside ham croquettes, garlic prawns, callos, tarantelo tuna and game when it's in. A board of 15 to 20 cheeses is on show in the dining room every day. Luis has long believed in making wine affordable to learn: from the early days, the house has poured a different wine each week at cost price to tempt younger drinkers.
Cocina de Toda la Vida
The cooking is traditional Spanish home food, 'de toda la vida', built on seasonal produce from the best suppliers: fresh vegetables from Navarra, game such as partridge, Galician meat, Cantabrian fish and conserves, and Barbate tuna. There is no fixed carta; the kitchen works from the chef's daily suggestions, which run to seasonal artichokes, red cardoon Navarra-style, roasted red peppers, black-truffle croquettes, partridge pickled or stewed Toledo-style, and spoon dishes such as chicken broth and verdinas with vegetables and clams. Desserts are homemade, from flan and cheesecake to tocino de cielo and pantxineta.
The Vinoteca
Given Luis's background in wine, the cellar runs to more than 2,000 labels, kept in several climate-controlled cellars so each wine reaches the table at the right temperature: young whites and sparkling wines at 4°C, special whites at 8°C and reds at exactly 16°C. Under the motto that every wine has its moment, Luis chalks the week's wines by the glass on a slate and changes them regularly.

The restaurant is run by the García de la Navarra brothers, who joined forces to open it in 2011 after running La Taberna de Pedro together. The kitchen is in Pedro's hands, cooking traditional Spanish home food from quality, seasonal produce. The cellar and dining room are Luis's: born in Villatobas, in Toledo, he was maître and sommelier at Restaurante Aldaba and for seven years president of Madrid's sommeliers' association, and counts Zalacaín's Custodio López Zamarra among his references.
