Taberna Montalbán opened in 2025 at Calle de Montalbán 3, in Los Jerónimos by the Retiro. It's a family project, started by Miguel and now run by his daughter Paloma, that mixes a traditional taberna with a proper restaurant: breakfasts and tostas, croquetas, callos and ensaladilla at the bar, then oxtail cannelloni, slow-cooked cheeks and confit cod to share. There's a weekday menú del día and a terrace out front.

The Story

Taberna Montalbán opened in 2025 in the Los Jerónimos barrio, by the Retiro. The idea came from Miguel, a fan of traditional cooking; his daughter Paloma now carries it on, cooking family recipes meant to bring back the flavours of childhood.

The Cuisine

Traditional Madrid and Spanish recipes with a modern twist, made with quality ingredients: the classics, brought a little up to date.

The Carta

The bar starts with bread and smoked butter, gildas, an anchovy 00 on crisp bread with smoked butter, cheeses and Ibérico ham. For picking, the bravas, a tortilla that's creamy but not runny, ensaladilla, croquetas of Ibérico ham, oxtail or baby squid (€14), the house callos, huevos rotos with ham or gulas, pisto with fried eggs, octopus carpaccio and Andalusian-style squid with three mayonnaises. To share: oxtail cannelloni with Idiazabal cream (€20), slow-cooked cheeks with roast sweet potato, confit cod with roast piquillo cream, crisp sea bass and a smoked, carved lomo bajo of beef (€28).

Tostas, Breakfast and the Daily Menu

The taberna smokes its own cod and salmon for the Ahumados en Casa tosta (€14), and the other tostas (€12) run from brie with txistorra to Ibérico secreto with roast-apple cream. It opens for breakfast early in the week, and a menú del día is served Monday to Thursday, 13:30–16:00. Desserts include cheesecake, a thin apple tart and an affogato with leche merengada ice cream.
