Biography

Early years

Pedro comes from a family with a long hospitality tradition in Madrid. He trained as a waiter at Viridiana, Príncipe de Viana, and Aldaba, restaurants where he learned the trade, with his brother Luis working as sommelier at Aldaba.

Career

After working in Madrid restaurants including Viridiana, Príncipe de Viana, Amparo, and Aldaba, Pedro opened his own small casa de comidas, La Taberna de Pedro, on Calle Alberto Alcocer in 2005. In 2011 he joined his brother Luis, the restaurant's sommelier, to found García de la Navarra, a restaurant-wine bar in the Retiro district, behind the Palacio de Cibeles. Both concepts now share the same address on Calle de Montalbán, with García de la Navarra's dining room, bar, and vinoteca alongside La Taberna de Pedro.

Philosophy

Pedro describes his cooking as a "cuisine of all times": simple recipes built on quality, seasonal ingredients, including vegetables from Navarra, game such as partridge and deer, and preserves from the Cantábrico Sea.
