The Story

Chao Tian Men Hot Pot opened on Plaza del Conde del Valle de Súchil around the turn of 2020, as the first European outpost of a long-established Chinese hot pot chain that, according to its front-of-house manager at the time, had some 700 restaurants in China. Its name and style point to Chongqing, the city most associated with spicy hot pot, and the chain says it supervised every detail, above all the broth, a laborious recipe of nearly twenty ingredients.

How Hot Pot Works Here

Each table has an induction plate where a pot of broth goes on to simmer: a savoury-spicy one, a fully spicy one for the brave, a pork-bone broth, or tomato or mushroom. You tick what you want on a paper carta that also lists the cooking time of each item (prawn balls, chrysanthemum leaves, goose intestine, frozen tofu, beef rolls, oyster mushrooms, fresh tripe and more), then everyone cooks and eats in the order they like. A station in the corner of the room holds the sauces, so you mix your own dip. It works best with a group around the pot, and the restaurant offers options for private events.
