It bills itself as a refuge of the Mexican coast, fusing tradition and vanguard, cooking that celebrates the sea with respect for the produce. The bar alongside it runs on its own terms, with a separate booking link and hours that go later than the dining room.

From Mexico City to Alberto Aguilera

Puntarena was founded in Mexico City in 2000 by Operadora Bajo de la Tintorera, a group known there for simple dishes that highlight fresh seafood, and it takes its name from a beach. By 2018 it had several restaurants across the city, and Madrid became its first opening abroad: it opened in October 2018 alongside the new Casa de México en España, a 2,700-square-metre historic building at Alberto Aguilera 20 that promotes Mexican culture, business and gastronomy. The restaurant has its own hours and entrance, separate from the Casa's. The group, now Grupo Puntarena, also runs Ticuí in Madrid.

The Carta

The cooking is Mexican Pacific-coast seafood with some fusion, adapted to European palates. Raw and cured dishes lead: tuna and yellowtail tostadas (€16 each), clams gratinated in escabeche, several aguachiles and tiraditos, from salmon with ponzu to a black tiradito with squid ink, and a Puntarena ceviche of corvina with corn, lime and chile cuaresmeño. The Pulpo Enamorado, crispy octopus with pickles and chile de árbol, and a crispy-rice tuna tartare are house favourites, alongside shrimp tacos alambre and Rosarito.

Bigger plates include pescado a la talla, the day's fish grilled over charcoal with chile pastes (€55), fish al pastor with achiote and grilled pineapple, a Veracruz-style kampachi, tuna with bone marrow, and from the land a milanesa cantinera, a braised pork shank and a short rib barbecued in machete style. There's a €3 cover per person.

The Bar

The bar runs every day from 13:00 to midnight with its own menu and separate bookings: guacamole, clams by the piece, malanga bravas, prawn tacos, an octopus skewer and brioche sandwiches of prawn milanesa or pork shank, with a carta of signature cocktails. The room is sober, with warm lighting, natural textures and just enough colour, a modern Mexican house.

The Team

Puntarena is run by Arturo Argüelles, director and partner, who led the group's international expansion, with founding partner Federico Rigoletti, the chef behind the carta. Rigoletti has spent more than 30 years in kitchens and credits his recipes to curiosity and chance: Italian cousins, an Austrian grandmother, Sunday family lunches and summers on Mexico's beaches. At the Madrid opening, chef Ulises Montes de Oca came over from Mexico to keep the original seasoning.
