About Bodega La Ardosa
The Story
In the 1890s Rafael Fernández Bagena, who had vineyards in the province of Toledo, founded a chain of La Ardosa bodegas to sell his wines in Madrid; it grew to around thirty taverns, and the one at Calle Colón 13 is the survivor. Butcher Gregorio Monje bought it in 1970 and began running it himself in 1979 with his wife Conchita Marfil and their sons Rafael and Ángel. In the 1980s the family threw itself into beer, becoming Madrid distributors for European brewers such as Bass and Warsteiner and early importers of Czech beers; the owners say La Ardosa had the first Guinness tap in Madrid. Gregorio died in 1995. Today Ángel Monje and Víctor Díaz Frey run Grupo Ardosa, which has rescued neighbouring classics: Casa Baranda (1919) next door, Bar Sidi (1943) at number 15 and the Asturian Casa Hortensia on Calle Farmacia. A separate La Ardosa on Santa Engracia isn't part of the family group.
The Cuisine
The tortilla has been made since the 1970s to Conchita Marfil's recipe, barely set and very juicy (a pincho is €4.85), and La Ardosa and Casa Baranda between them sell around 100,000 pinchos a year. The owners say the bar was the first to bring salmorejo out of Córdoba and kept gildas going for decades. The carta also covers Joselito charcuterie, cecina with piquillos, mojama, conservas, grilled artichokes, croquetas (ham, carabinero, cecina, bacalao), cazón en adobo, Cantabrian rabas, callos, a house revuelto of potato and salt cod, Palencia morcilla and huevos rotos with chanquetes.
Bar, Back Room and Drinks
You'll find it by its red-painted façade. Inside there's the bar, high tables by windows that open in good weather, and the house's signature: tables behind the bar that you reach by ducking under the counter. There are no bookings, and at peak times even a standing spot is an achievement. Vermouth comes on tap (with soda if you like), wine by the glass, and shelves of bottled beers line the walls.
Practicalities
The kitchen runs non-stop, so tortilla works for breakfast or after midnight, and a visit can cost from about €10 for a pincho, a gilda and a drink up to €30 or €40 for a proper meal. Call 915 21 49 79 for anything specific.
