Disfrutar carries forward the multispherical experiments Oriol Castro, Eduard Xatruch, and Mateu Casañas began at elBulli, applying them to two 20-course tasting menus in Eixample. Service unfolds across roughly three hours of layered, edible spheres and reactive techniques.

Background

About Disfrutar

The Story

Oriol Castro, Eduard Xatruch, and Mateu Casañas opened Disfrutar in December 2014 after spending the final years of elBulli as senior members of Ferran Adrià's kitchen team. The name means "to enjoy" in Spanish, a deliberate counterpoint to the technical rigour behind every plate. The restaurant's acknowledgements name three Michelin stars in the 2024 guide, three Repsol soles since 2018, and a run in the OAD list since 2016. Repsol's guide describes it as "a laboratory of ephemeral gastronomic emotions where the chefs reinvent avant-garde cuisine with a language of their own."

The Cuisine

The kitchen's defining technique: multispherical constructions. The signature pesto, 20 micro-globes of basil, pine nut, and parmesan layered with smoked eel and pistachios, appears on the Classic tasting menu and has become one of Barcelona's most photographed dishes. Solid bubbles, another house invention, transform broths into edible spheres that burst on contact. Two tasting menus are offered. Classic (€325) features the restaurant's greatest hits. Festival (€325) rotates seasonally and, according to Michelin inspectors, "showcases its latest seasonal creations with strong roots in the local area." Both run 20+ courses over approximately three hours.

The Team

Castro, Xatruch, and Casañas share the kitchen as co-equal head chefs, an unusual arrangement in fine dining. All three trained at elBulli under Ferran Adrià. Repsol's guide names Paco Lara as an additional chef. The front-of-house team manages two seatings per service for roughly 50 diners.

Experience

Disfrutar Dining Experience

The restaurant's own description centres on ceramic-led interiors: the entrance is inspired by the wrought iron of the Ninot Market across the street and the colours of Mironian ceramics, while a central ceramic corridor passes the open kitchen and opens into a bright, white-toned main dining room and terrace that nod to sister restaurant Compartir in Cadaqués. The open kitchen is visible throughout service, with approximately 50 guests seated across two seatings.
