The Story
Clandestí opened in May 2016 in a former garage on Carrer Guillem Massot, in Palma's Bons Aires area. Pau Navarro started out running cooking classes at a long counter with a stove, then turned it into a proper restaurant built around a set tasting menu. The room is tiny, a single counter for a handful of diners, and you sit facing the kitchen while the team finishes the dishes in front of you. There's no carta. Navarro and Ariadna Salvador write a fresh menu every day off what they bring back from the market, so the booking matters: they cook for the diners they're expecting, not for walk-ins.
