The building goes back to 1576, and in between then and now it's done time as a hospital, an olive-oil marketplace, and a soap factory. Stockholm-based firm Wingårdhs led the redesign, co-led by Helena Toresson and Gert Wingårdh alongside Jordi Herrero Arquitectos and Eduardo Garcia Acuna Arquitecto, and kept what survived all those lives: cross vaults, beamed ceilings, bay windows. The entrance and rooms are lined with custom watercolor-style tiles, made through a partnership between Wingårdhs and local ceramics maker Huguet. It's a Design Hotels member property and part of the Nobis Hospitality Group, the Swedish hotel brand behind it.

The in-house restaurant, Xalest, is run by chef Xema Álvarez. There's also a bar on site and a courtyard plunge pool to cool off in between.
